Speedy Beef Hash

Ingredients

Add ground beef to shopping list 1 lb. ground beef

Add medium onion, chopped to shopping list 1 medium onion, chopped

Add frozen O'Brien hash brown potatoes, thawed to shopping list 3 cups frozen O'Brien hash brown potatoes, thawed

Add salt to shopping list 1/2 teaspoon salt

Add pepper to shopping list 1/4 teaspoon pepper

Add salsa to shopping list 1 cup salsa

Add shredded Colby-Monterey Jack cheese to shopping list 1/2 cup shredded Colby-Monterey Jack cheese

Add sliced green onions, optional to shopping list sliced green onions, optional

Add ripe olives, optional to shopping list ripe olives, optional

Directions:

In a skillet, cook beef and onion over medium heat until the meat is no longer pink; drain.

Stir in the potatoes, salt and pepper. Cook ant stir over medium-high heat for 7-9 minutes or until potatoes are lightly browned. Stir in salsa. Sprinkle with cheese; cook until melted. Sprinkle with onions and olives if desired.
