Chicken Meatball Appetizers

Ingredients

Add boneless, skinless chicken breasts, cooked and minced to shopping list 2-1/2 cups boneless, skinless chicken breasts, cooked and minced

Add onion, finely chopped to shopping list 3 tablespoons onion, finely chopped

Add celery, finely chopped to shopping list 3 tablespoons celery, finely chopped

Add carrot, finely chopped to shopping list 2 tablespoons carrot, finely chopped

Add dry bread crumbs, finely chopped to shopping list 2 tablespoons dry bread crumbs, finely chopped

Add egg white to shopping list 1 egg white

Add poultry seasoning to shopping list 1/2 teaspoon poultry seasoning

Add pinch pepper to shopping list pinch pepper

Directions:

In a bowl, combine all ingredients; mix well. Shape into 3/4 inch balls; place on a baking sheet that has been coated with nonstick cooking spray. Bake at 400 degrees for 8-10 minutes or until lightly browned.
