Ingredients

Add (7 ounce) basil pesto sauce to shopping list 1 container (7 ounce) basil pesto sauce

Add red wine vinegar or sherry to shopping list 3 Tablespoons red wine vinegar or sherry

Add freshly ground black pepper to shopping list 1/2 teaspoon freshly ground black pepper

Add fresh white mushrooms, sliced to shopping list 1 pound fresh white mushrooms, sliced

Add cucumbers, peeled and thinly sliced to shopping list 2 cups cucumbers, peeled and thinly sliced

Add cherry tomatoes, cut in half to shopping list 2 cups cherry tomatoes, cut in half

Add red onion, minced to shopping list 1/2 cup red onion, minced

Add Boston, Butter or Bibb lettuce to shopping list Boston, Butter or Bibb lettuce

Directions:

In a large bowl stir together pesto, vinegar and black pepper.

Add the mushrooms, cucumbers, cherry tomatoes and red onion; toss to coat.
